This is a hand crafted washed rind cow's milk cheese that combines traits of Gouda and Appenzeller. Aged for 8 months on cedar wood planks adding robust flavors to the cheese. It has creamy and rich flavors with sweeter overtones and distinctive eyes throughout the body of the cheese. All of the milk used comes from Gunn's Hill family dairy farm. It pairs well with white wines such as Chardonnay and Sauvignon Blanc, as well as Pilsner beers.

Sold in ~100g portions. If you'd like more than 100g, add another to your cart. Whatever amount you choose, we'll default to cutting you a single large piece of cut cheese, not multiple 100g wedges.
