Often called “the holy grail of raw milk cheeses”, Vacherin Mont D'or is a pungeant, decadent cheese produced over a single season each year. From Switzerland, it's made from cow’s milk produced during the fall and winter months—when the herd eats straw and fodder instead of grazing on the pasture. This diet leaves the cheese with a distinct richness, and the spruce wrapping infuses a woodsy flavour to the soft paste.
